This exquisite and delicious tea is grown in the Hou Gang village near the Huangshan Mountain in Anhui. This Tai Ping Hou Kui green tea is entirely processed by hand. It is first heated in a wok for several minutes to kill the enzyme that allows tea leaves to oxidize (black tea). It is then roasted in a four-drawer system at progressively lower temperatures. Upon completion, the tea leaves are laid out by hand between two smooth pieces of paper or cloth, and the leaves are pressed using wooden blocks, leaving the leaves incredibly thin. Finally, the tea is roasted once again to further reduce the moisture content so that it can be stored to retain its beautiful freshness. The taste is fresh and sweet and delivers 3-5 infusions.
